Portabella Chili Recipe

Portabella Chili


  • 1 medium onion, diced                
  • 2 pounds portabellas or baby bellas, chopped
  • 1 celery stalks, diced                    
  • 2 1/2 cups diced tomatoes
  • 2 Teaspoons garlic, minced                
  • 2 cups tomato sauce
  • 2 Tablespoons olive oil                
  • 4 cups kidney beans or less if desired
  • 1 Green Bell peppers diced                
  • 2 Tablespoons chili powder
  • 1 red bell peppers, diced                
  • 1 Tablespoons corn meal
  • 1 Tablespoons jalapenos, minced            
  • 1 Tablespoon  cumin
  • 2 Teaspoons salt                
  • 1 Teaspoon black pepper


  1. Heat olive oil in a large soup pot over medium heat.
  2. Sauté the onions, celery, garlic, chili powder, cumin, salt and pepper in the hot oil until just browned.
  3. Add mushrooms and sauté 5 minutes more, add remaining ingredients, and bring to a boil. Simmer 20-30 minutes.  
  4. Serve topped with diced raw onion and River Valley Ranch 5 Cheese Garlic Spread.

Serves 6 adults. Doubles as a great dip with tortilla chips. Remember; chili always tastes better the longer it simmers or served the next day!

Butternut Squash Soup Recipe


Butternut Squash Soup


  • 1 Large butternut squash
  • 2 Cloves garlic, minced
  • 1 Large carrot, chopped
  • 1 Onion
  • ½ Tsp cayenne pepper
  • ¼ Tsp clove
  • Pinch of cardamom
  • Salt and pepper to taste 
  • ¼ Cup Olive oil


  1. Cut squash lengthwise and remove seeds.
  2. Oil and season before placing cut side down in and oven at 400 for approx. 45 minutes.  
  3. Chop onion and carrot into equal size pieces and place in a heavy pot over medium heat, cover.
  4. Once squash is soft to the touch scrape away the softened flesh into the pot with onions and carrots, add garlic and water until you barely cover the vegetables. Cook covered for 45 minutes.  
  5. Ladle into a blender or use an immersion blender (not a food processor) to thoroughly puree soup, if mix looks lumpy add a little hot water.
  6. Now add seasoning and adjust consistency to your liking. Try adding pumpkin pie spice to softened cream cheese for an indulgent garnish.
  7. For a sweeter soup add ½ cup of brown sugar.
  8. Oven roast heirloom tomato.
  9. Cut mushroom baguette into slices.
  10. Spread RVR Five Cheese Garlic Spread on mushroom baguette slices.
  11. Bake bread in oven until cheese is melted.
  12. Take bread out of oven and top with roasted tomato and torn fresh basil.

    We have been growing mushrooms for over 40 years, and today we produce over five varieties of mushrooms year-round and other varieties intermittently. Join us for an immersive farm tour and you'll get a behind-the-scenes look at our mushroom farm and learn about how we grow shrooms from compost to harvest.

    On the Farm Tour you will get to visit our Kitchen where we handcraft a wide array of preservative-free foods including pasta sauce, garlic cheese spread, hot sauce, salsa, and so much more. You'll also learn about how we grew from a tiny kitchen pickling mushrooms to where we are today.



    Every year we grow a variety of vegetables and herbs in our chemical-free garden. On the Farm Tour you'll get to explore the garden to see what we're growing this year and learn about our growing process.

    The Best Portabella You've Ever Had

    Garlic Portabellas

    INGREDIENTS (this will cover 2 medium caps)

    • 3 Tablespoons olive oil
    • 2 Tablespoons balsamic vinegar
    • 1-2 cloves garlic, minced
    • Sprig of fresh rosemary or basil
    • Salt and pepper to taste


    1. Toss Mushrooms in marinade and place in a casserole dish or baking sheet cap-side up.
    2. Cover with foil and bake at 350 for 10-15 minutes depending on size.
    3. Remove from heat and allow to rest in the dish on the counter until mushrooms are room temp.
    4. Place on grill for 3-5 minutes or sauté, or microwave, or toaster oven.
    5. Mushrooms maybe made up to a week in advance, so keep some on hand to add to your favorite salad, soup, taco recipe etc.
    6. Try adding wasabi, mustard, soy sauce or chilies to spice up your mushrooms.

    Adventure to Sip and Sample with Common Pantry for a Community Party with Purpose

    Common Pantry has been working to combat hunger and food insecurity in Chicago's north side for over 45 years. When they approached us to host their annual wine-tasting fundraiser earlier this year, we wanted to do something special. We decided to reach out to our friends and organize a party to remember. We are excited to announce Sip & Sample with Common Pantry, a night of community, farm-to-table eats, drinks, prizes and games, all to benefit neighbors in need.

The Common Pantry provides food to those in need, home delivery for seniors, a monthly produce distribution, social services, and a hot meal each Wednesday. Common Pantry is a 501(c) 3 organization.     Cream of Morel Soup Recipe

    It's that time of year!

    Morels are a real treat, only available for few short weeks this time of year. Find local, wild-foraged morels at the Farmer's Table, Farm Store, or your local market and make a delicious soup at home!


    • 1 pound fresh Morel mushrooms
    • juice of 1 lemon
    • 6 Tablespoons butter (divided)
    • 2 Tablespoons chopped onion
    • 1 small garlic clove, minced
    • salt and pepper
    • 5 Tablespoons flour
    • 4 ½ cup mushroom stock
    • ½ cup heavy cream


    1. Slice morels in half and soak in salt water for 10 minutes, rinse thoroughly.
    2. Finely chop morels, sprinkle with lemon juice.
    3. Melt 2 Tablespoons butter in pan. Sauté onion and garlic until soft and yellow but not browned. Add morels. Cook until mushrooms absorb juices. Season to taste with salt and pepper.
    4. Melt remaining butter in a large saucepan. Stir in flour, then add hot mushroom stock gradually, stirring constantly to avoid lumps. Simmer 20 minutes.
    5. Add mushroom mixture and simmer an additional 10 minutes. Season with salt and pepper if needed. Add cream and serve hot.

    What to Expect at RVR Markets in 2016

    Fresh Produce from RVR Farm

    At the Ranch in Burlington, Wisconsin we have a year-round mushroom farm and a ten-acre garden. Everything we grow is 100% chemical-free, from our fresh mushrooms to our vegetables & herbs.

    Mushrooms - We've been growing fresh mushrooms at our Farm in Burlington, Wisconsin for over 40 years and every year we offer over five varieties of chemical-free shrooms including crimimi, shiitake, white button, portabella, oyster, and lion's mane. Certified Organic varieties available.

    Garlic - Garlic loves the rich mushroom compost that we till into our soil and we've been hearing from people for years that our garlic is "just delicious." We use a ton of fresh garlic in the Kitchen. You can find Spring Garlic early in the season at select markets and Garlic Bulbs later on.

    Asparagus - We grow chemical-free asparagus at our Farm and it has become a local favorite. Our asparagus is known to be especially tender, meaning it cooks fast and is oh-so-tasty as a main veggie course or a side for your farm-to-table breakfast, lunch, or dinner. Try it with our local eggs!

    RVR Garlic Cheese Spread - We dare you to not get hooked on this spread! Made with over eleven Wisconsin cheeses and fresh garlic from our Farm, this spread makes the best "instant" cheesy garlic bread ever. Pair it with pasta for a special mac-and-cheese experience, enjoy with a mushroom burger, or try it on your whole or mashed potatoes. We love it on pretty much everything.

    RVR Hot Sauces -  Not all hot sauces are created equal. We use fresh ingredients in our 5 flavorful and preservative-free varieties of hot sauces.     Mushroom Compost is a Versatile Soil Conditioner for Landscaping, Gardening & Farming

    Mushroom compost is a dark, rich in organic matter, soil conditioner that is the end product from the production of a crop of mushrooms. It is primarily used as soil amendment and plant mulch in residential and commercial landscaping, gardening and farming. Mushroom compost starts as a rich growing medium that is made from a variety of agricultural bi-products.

    At River Valley Ranch, we make our own compost by mixing wheat straw, chicken manure, gypsum and soybean meal, and Canadian sphagnum peat moss. The mix goes through a rigorous process and is twice-pasteurized, then gets placed into beds where we grow certified organic mushrooms. Every week, we make a new batch of compost for growing, and yield a spent mushroom substrate, a "mushroom compost" that has many agricultural applications.

    Uses of Mushroom Compost

    Landscaping & Lawn Maintenance

    Mushroom compost can be used as a soil amendment, plant mulch, and sodding medium for commercial and residential landscaping and lawn maintenance:

    • Lawn Care - Renew your lawn by spreading a thin layer of mushroom compost over the lawn's surface or till into the soil if you are growing a new lawn.
    • Weed Prevention & Fungus Inhibition - Use mushroom compost as an organic mulch or mix in with your mulch to prevent weed growth and inhibit fungus development.
    • Flowers, Shrubs, Trees - A two inch thick layer worked into soil before planting your garden is a great addition to the soil if you want to promote hlthier plants. 
    • Sodding - Till mushroom compost into the soil, moisten the soil, lay your sod, and spread mushroom compost into the cracks between sod pieces. Known to improve rooting.


    Mushroom compost is used as a soil conditioner and mulch in growing operations ranging from small home gardens to large-scale commercial farms. A great alternative to chemical fertilizers, mushroom compost is a relatively low-cost soil conditioner known to improve soil health, improve crop health, and increase yields in droughts in comparison to chemical fertilizers.

We use a good portion of the compost we generate from farming mushrooms in our chemical-free vegetable and herb garden. Garlic absolutely loves this stuff. Tomatoes, too.
