Salad
1 pound fresh green beans, cut into ¾ inch pieces steamed or blanched until tender
1 Tablespoon Dijon mustard
4 Tablespoons olive oil.
Salt & pepper to taste
Toss ingredients together in a mixing bowl.
Whisk together mustard, red wine vinegar, minced garlic, salt and pepper (to taste).
Slowly whisk in 4 Tbsp. olive oil.
Pour dressing over vegetable mix and toss lightly.
Chill and serve.
